Restaurant David Toutain
At lunch, the restaurant offers 4, 6, 8, or 10 courses. At dinner there are fewer choices (only the 8 and 10 course meals are offered), so if you need the lower price point, opt for lunch. We ordered the 10 course – note that this is a 2 star Michelin restaurant and thus expensive. Our lunch was 4 hours long.
They began with 5 amuse-bouche, and only after this did they ask us how many courses we would like. This was smart of them because the initial dishes were so interesting and delicious we opted for the 10 course. We are hard to surprise or impress, but this restaurant did.
The amuse bouche
Some themes from this chef: emulsification instead of dairy to add creaminess and a juniper infusion that we think had been used in vinegar. The emulsification showed up in several dishes. The repetition did not bother us, and it also meant that I, who am lactose intolerant (and did not warn the chef in advance) could still eat most of the dishes as planned. The juniper/vinegar appeared as gel-like dots of flavor in 2 dishes. It had a pleasant effect in both however so we didn’t mind the repetition.
The aesthetic of the restaurant is lovely, with natural materials on the walls and a clean, pleasant bathroom (up a flight of stairs).
